Seasoning salt is an easy way to perk up a recipe. It is also great “straight up” as a seasoning for potatoes, chicken, popcorn and more. If you want to save a bit of money over prepackaged seasoning salt, or if you just prefer to know exactly what ingredients go into your seasoning, here is an easy Lawry’s Copycat Recipe to make your own seasoning salt.

Lawry’s Copycat Recipe

2 Tbsp salt
2 tsp sugar
1/2 tsp paprika
1/4 tsp turmeric
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cornstarch

Mix all of the above in a small bowl until well blended.  Store seasoning salt in an empty spice bottle or other airtight container.

Turkey (or Chicken) Taquitos Recipe – They’re Even Gluten Free!

This recipe comes from Christy at The Shopper’s Apprentice. These Turkey Taquitos are a great way to use up leftover turkey, or you can substitute chicken if that’s what you have on hand. They are crispy and delicious and a way to turn your leftovers into something special!

Turkey Taquitos Recipe

12 corn tortillas
1 lb. cooked turkey, shredded (or chicken)
1 onion, chopped
1 package Taco seasoning
3/4 cup hot water
1 clove garlic, minced
Vegetable oil

Lightly sprinkle each tortilla with water. Wrap the stack in aluminum foil and place in a 200 degree oven for 10 minutes to soften.  Leave in foil until ready to use.  In a skillet, combine meat, seasonings, water, onion, and garlic.  Stir well. Bring to a boil, reduce heat and simmer 10 minutes. Place 2 Tbsp of the mixture in the center of each warmed tortilla. Roll up tortillas tightly, securing with toothpicks. In a large, deep saucepan, heat oil to 375 degrees. Fry rolled tortillas in oil until golden brown and crisp. Drain on paper towels.  Keep warm in oven.  Remove toothpicks before serving.  To serve, place on a bed of lettuce and garnish with salsa and guacamole.

Tuna can be a very versatile staple to keep in your pantry. Of course there are the old standbys of tuna salad sandwiches and tuna noodle casserole, but there are a LOT more possibilities beyond that. Case in point: this Tuna Bruschetta Recipe. It uses fresh, simple ingredients and is packed with nutrition.  It is light and perfect as an appetizer or as a lunch all by itself.
 

Tuna Bruschetta Recipe

 
Ingredients:

4 whole wheat pitas
1 Tbsp olive oil
coarse sea salt
1 can Ocean Naturals Skipjack Chunk Light Tuna
2 tsp Italian seasoning
4 vine ripened tomatoes, chopped
2 Tbsp fresh basil, chopped
2 Tbsp red onion, finely chopped
1 clove garlic, minced
1 tsp olive oil
2 tsp balsamic vinegar
salt and pepper

Heat oven to 375 degrees.  Cut each pita into eight wedges. Brush lightly with olive oil and sprinkle with coarse sea salt.  Spread in a single layer on a cookie sheet and bake for 10-15 minutes, flipping once.  Let cool.

In a medium bowl, combine tomato, basil, onions, garlic, olive oil and vinegar.  Sprinkle with salt and pepper.  Refrigerate tomato mixture for at least 20 minutes to blend flavors.

In a small bowl, combine tuna with Italian seasoning and salt and pepper to taste.

To serve, place a spoonful of tuna on each pita wedge.  Top with tomato mixture.  Enjoy!!

Brownberry Healthfull Bread Swap Out with Reader Giveaway

I won’t lie, we go through a lot of bread around here.  There are only four of us but we like sandwiches, and french toast.   We usually buy the same brand of bread, but occasionally we will branch out and try something new.  When I was given the opportunity to do the Brownberry® Healthfull® Bread swap out, I did not tell my family, I just went ahead and signed up for it.  Of course they noticed the change right away, the slices are slightly smaller, and is a bit more dense than our regular bread.  So I couldn’t hide the fact that our bread was different, and swapped out. Luckily my family is pretty easy going and did not complain about the swap.

First I tried our favorite Brinner (Breakfast for Dinner at our house) French Toast.  I decided to try the Steel Cut Oats and Honey Brownberry® Healthfull® Bread for this particular meal.   The Steel Cut Oats and Honey bread tasted great for this recipe.  It is not fancy or hard to make.  Just a few simple ingredients.   Judging from this smile, it looks like our daughter liked the new bread:)IMG_0861

Easy French Toast

Easy French Toast

Ingredients

  • 8 thick slices bread
  • 3 eggs
  • 1 1/2 cup milk
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 teaspoon vanilla

Instructions

  1. Beat together egg, milk, desired spices and vanilla.
  2. Heat a lightly oiled griddle of skillet over medium-high flame.
  3. Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot.

Our second “recipe” is not hard to make and is our version of “Grilled Cheese”.  This time we tried the Healthfull® Nuts & Seeds bread.  We used sliced colby jack cheese and then sliced turkey. Instead of butter I put coconut oil on the outside of the bread, so it still gets the golden grilled look to it.

This was a success as well.  The best part of this bread is that it is better for you!  The Healthfull® Nuts & Seeds bread for example:

Summer is nearly here and that means it is the season for refreshing, light and delicious drinks! I personally love drinks with real fruit added to them. This easy recipe starts with ginger ale and then makes it special with the addition of frozen berries. You can use regular ginger ale, or opt for a lighter option with a low-calorie soda.
 

Ginger Berry Fizz Drink Recipe

 
Ingredients:

2 cups frozen mixed berries
1 Tbsp sugar
Ginger Ale

Directions:

Mix the sugar with the frozen berries in a small bowl. Microwave until starting to soften. Place berry mixture in blender and pulse until a puree forms with a few large chunks of berry remaining. To serve, put ice cubes in a glass. Add a big scoop of berry puree. Fill glass with Canada Dry TEN Ginger Ale, stir and serve!

Homemade Tortilla Chips in the Microwave – Easy, Healthy Recipe

I already LOVE homemade potato chips made in the microwave, so I figured I should be able to do the same thing with tortilla chips. Yep, it works! Very good and much healthier than store-bought fried chips.

 

3 corn tortillas
cooking spray or oil mister
coarse-ground salt

Cut each tortilla in 6 pieces using a pizza cutter or knife. Lightly spray on both sides with cooking spray. (I like to use my olive oil mister to spray.) Sprinkle with the salt. Spread out on a microwave-safe dinner plate so pieces are not touching. Microwave for 1 minute to 90 seconds (lower wattage microwaves will need the 90 seconds). Flip chips over and microwave on other side 1 minute to 90 seconds. If not yet crispy, flip again and cook another 30 seconds, continuing until crispy. Serve warm.

Half the Fat and Less Sugar Chocolate Chip Cookie Recipe

When making chocolate chip cookies from the classic tollhouse recipe on the Nestlé Chocolate Chip bag, I have long decreased the sugar and used half the chocolate chips.  Well, today I accidentally halved the butter and the egg in the recipe and guess what…..they still tasted good!  They taste different than “regular” cookies of course and the shape/texture is different, but they are still good and much less guilt inducing!

Half the Fat and Less Sugar Chocolate Chip Cookies

2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp vanilla extract
1 large egg
1 cup chocolate chips

Heat oven to 375 degrees.  Mix flour, baking soda and salt in a small bowl and set aside.  In a large bowl, beat together butter, sugars and vanilla until creamy.  Add egg and beat well.  Gradually add the flour mixture into the butter/sugar mixture.  Stir in chocolate chips.  Drop by rounded teaspoons onto ungreased baking sheets.  Bake 10-11 minutes or until starting to brown.  Cool on baking sheets several minutes and then transfer to wire racks to continue to cool.

This really has to be one of the easiest recipes EVER! It only uses a few ingredients and it sits cooking in your crockpot all day! It tastes delicious served on buns or just on a plate with a side of potatoes and veggies.

Ingredients:

3 pound beef chuck roast
1 1/2 cups BBQ Sauce
6 cloves garlic, peeled and halved
salt and pepper

Directions:

Place the beef in the slow cooker. Cut 12 deep slits spread out over the surface of all sides of the roast. Press 1/2 clove of garlic into each slit. Sprinkle both sides of roast with salt and pepper. Add BBQ sauce and turn roast to coat all sides. Cook on low 7 to 8 hours or until meat shreds easily by pulling it apart with two forks.

To serve, place on sturdy buns like kaiser rolls, or just serve on a plate alongside mashed potatoes (which is how my husband likes it).
