Easy Lower Fat & Lower Sugar Banana Bread Recipe

This is a delicious, moist banana bread recipe. It is hard to believe that it has less fat and sugar than common recipes. I add whole wheat flour (see ingredient list) to make even more healthy. However, I also like to add about 3/4 cup of semi-sweet chocolate chips. This ups the fat level, but dark chocolate is good for you!

  • 2/3 cup white sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla
  • 2 large bananas, mashed
  • 1/4 cup water
  • 1 2/3 cups all-purpose flour (I use 1 c. white flour and 2/3 c. whole wheat)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  1. Preheat oven to 350 degrees F.  Coat a loaf pan with non-stick cooking spray. 
  2. In a large bowl, cream the sugar and butter together. Beat in the eggs, vanilla, water and bananas
  3. In a small bowl, mix together all dry ingredients until well blended.
  4. Add the dry mixture into the banana mixture just until moistened. 
  5. Bake for 60 minutes or until top is firm to touch and golden brown.  Cool in pan tilted onto its side for 10 minutes and then remove from pan and let cool on a wire rack.
