Easy Tasty Oven Baked Skin-On French Fries Recipe

Potatoes are on of the best foods to stretch your budget.  Not only are they inexpensive, but potatoes are packed with nutrients, especially if you leave the skins on! 

Ingredients:
4 medium potatoes
1 Tbsp canola oil
Salt to taste

Heat oven to 450 degrees. Scrub the potatoes well.  Cut into slices appx 1/4″ thick.  Turn the potato and cut each slice in 1/4″ as well, leaving you with 1/4″ x 1/4″ fries.  For optimal results, soak the fries in cold water for 30 minutes. (If you don’t have 30 minutes, even a 5 minute soak helps to remove excess starch which results in a crispier fry.)  Drain water and wrap potatoes in a clean dish towel to remove excess water or spin them in a salad spinner.

Place the potatoes on a baking sheet (heavy, dark colored sheets are the best).  Pour oil on potatoes and season with salt.  Toss to evenly distribute the oil.  Bake 15-20 minutes or until fries are golden brown, turning at least once.

This is the most delicious and easy homemade bread. I have been making it for about 3 months and it has become a staple in our house. I love it because it only uses 4 ingredients, is the cheapest bread you can make since it uses only a tiny bit of yeast, is fat-free, looks great, has fantastic texture and tastes delicious!

No-Knead Bread Recipe
3 C all-purpose flour
1/4 tsp. instant yeast
1 1/4 tsp. salt
1 5/8 C Water

Combine dry ingredients in a large bowl and stir in water until well blended. Cover bowl with plastic wrap and leave in a warm place to rise for at least 12 hours (16-18 hours is better).

Next, place the dough on a generously floured work surface, sprinkle with flour, and fold it in on top of itself twice. Turn the bowl you were using at first upside down over the dough and let it rest for 15 minutes.

After 15 minutes, shape the dough into a ball. Coat a smooth cotton towel with flour and put the ball seam side down, dusting the top with more flour. Fold sides of towel over top of ball and let rise for 2 hours. The dough should double in size.

30 minutes before the dough is ready, heat oven to 450 degrees and put a 6 to 8 quart heavy pot with a cover (pyrex, cast iron, enamel or ceramic work best) in to heat. Remove the pot from the oven and dump the dough ball seam side up into the pan. Cover the pot and bake for 30 minutes. Then remove the lid and bake another 15 to 30 minutes or until the loaf is nicely browned. Remove from oven and cool on rack.

Easy Square Biscuit Recipe – No Shortening, No Biscuit Cutter Necessary!

This is a super easy biscuit recipe that pulls together in just a few minutes from ingredients that you most likely have in your kitchen already. It requires NO shortening and you just cut them with a knife, so you don’t even need a biscuit cutter!


Easy Biscuit Recipe

2 C flour
2 Tbsp Sugar
3 tsp baking powder
1 tsp salt
1/3 C oil
2/3 C milk

Preheat oven to 475 degrees. Mix dry ingredients together. In a small bowl, add the oil and milk, but do NOT mix together. Transfer liquids into dry ingredients and stir until well blended. Knead a few times (you can just use a spoon/spatula rather than getting your hands dirty) to form it into a ball. Roll out dough to 1/2″ thick between two pieces of plastic wrap, wax paper or aluminum foil. Cut into 10-12 squares. Bake 10-12 minutes, or until just starting to brown. OPTIONAL: Brush tops with butter for the last 2 minutes of baking.

Easy Quesadillas in the Toaster Oven (Try it with Leftovers!)

This simple recipe can be made “as is” or it can be easily adjusted to use up pretty much any type of leftover meat or veggies you have lurking in your fridge.  You can also add leftover rice!

Easy Toaster Oven Quesadillas

Large Flour Tortillas
Canned Refried Beans (we use low-fat)
Shredded Mexican Style Cheese
Chunky Salsa

Spread half of one tortilla evenly with 1/3 cup refried beans.  Spread 1/4 cup salsa over the beans. Sprinkle beans with cheese. Fold the tortilla in half and place on toaster oven rack. Use the TOAST setting to toast until lightly browned.
