How to Grill Sweet Corn on the Cob (in Husks)

Grilling corn on the cob tastes fantastic and is a great addition to any summer BBQ party.  It’s also very easy to do!

Start by peeling back the husk, leaving the bottom of each husk attached to the cob.  Remove the silk (some people call them the strings) by pullint/rubbing with your hands, or if they are tough use a moist paper town or vegetable brush.

Next, put the husks back in place to cover the corn.  To keep it extra tight you can use kitchen string, but that’s totally optional.  Then placestring things on the corn – from the  the corn in a large bowl/tub of water and let soak for a minimum of 30 minutes.  An hour or more is better.

Take the soaked corn and grill it over medium heat, turning, frequently, for about 20 minutes.  Enjoy!

Blueberry Muffin Smoothie Recipe

This smoothie recipe is perfect for when you’re craving a big fatty muffin, but want to opt for something more healthy, yet still delicious.  Since it uses oats, it’s nice and filling.  (NOTE: I know not everyone is crazy about oats in a smoothie because it gives it a different texture, but I like it!)

1/3 cup frozen blueberries*
1/4 cup quick oats
1/4 tsp ground cinnamon
1/4 tsp sugar (or honey))
1 cup milk

Place all in a blender and blend until smooth.

*If using fresh blueberries, you will want to add a bit of ice and decrease the milk to compensate for the ice.

Easy Shrimp Dip Appetizer Using Canned Shrimp

If you want to serve shrimp as an appetizer, but don’t want to spend a fortune, try this shrimp dip as an alternative. It uses just one 4.5 oz can of shrimp, so you still get shrimp taste without shrimp expense.

shrimp
One 8 oz package of cream cheese
1/2 Cup Miracle Whip
1/3 Cup chopped green onions
One 4.5 oz can shrimp (drained)
1/8 tsp garlic salt

Mix first 3 ingredients until creamy.  Add rest of the ingredients and stir well.  Serve with crackers or small toasted garlic rounds.

Quick, Easy and Delicious Vanilla Buttercream Frosting Recipe

This recipe is SO quick and easy and is delicious on any type of cake, or even on sugar cookies. For a quick treat I also like to make it and spread between two graham crackers – YUM! It’s easiest to make in an electric mixer, but you can certainly use muscle power to stir by hand.

Chocolate Cupcakes1/3 C butter, softened
3 C confectioners sugar
1 tsp. vanilla
2-3 Tbsp. milk

Beat together butter and sugar. Add in vanilla and 2 Tbsp milk. Beat until the frosting is smooth and spreadable. If too stiff or lumpy, add the additional milk. For colored frosting, add a few drops of food coloring.

Easy and Moist Lemon Almond Cake Recipe

We had our last day of ECFE class this morning and one of the moms brought this DELICIOUS lemon almond cake. It tastes to rich and delicious it is hard to believe there is only 1/4 cup of butter in it!

1 3/4 C. flour
3/4 C. sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg
1/4 C. melted butter
2 tsp lemon zest
1 Tbsp lemon juice
1 C. milk
1/2 C. slivered almonds, chopped

Mix first 4 ingredients in a large bowl. Make a well in the middle of the bowl and add the rest of the ingredients all at once except the almonds. Stir until moist. Fold in the almonds. Pour into a greased loaf pan.  Bake at 350 degrees for 50 minutes.

Homemade Whipped Topping Mix Recipe

This recipe can take the place of buying tubs of frozen whipped topping or packets of whipped topping mix.  I still need to calculate the exact cost…..but I know it’s cheap!  This recipe makes about 2 cups.

1 tsp. unflavored gelatin
2 tsp. cold water
3 Tbsp. boiling water
1/2 C. ice water
1/2 cup dry milk powder
3 Tbsp. sugar
3 Tbsp. oil

Chill a small bowl in the fridge.  In another bowl, let the gelatin soften in the cold water.  Then add the boiling water and stir until completely dissolved.  Cool until tepid.  Put the ice water and powdered milk in your chilled bowl.  Beat on high until peaks form.  Add the sugar while beating and then add the oil and gelatin. Place in freezer for 15 minutes to cool and then move to the fridge.
