Easy and Hearty Cowboy Beans with Beef (with a Vegetarian Option)

This is a nice, hearty meal that is easy to make and inexpensive in that it only uses 3/4 ground beef to make a big pot. You can actually decrease the amount of beef and it is still good. For a vegetarian option (even cheaper AND more healthy) simply replace the beef with a can of pinto beans and substitute a table of olive oil for the bacon.

4 slices bacon, chopped
3/4 pound lean ground beef
1 medium onion, diced
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
2 cloves garlic, minced
2 15-oz cans of baked beans
1 15-oz can whole kernel corn, drained

Cook the bacon in a large saucepan over medium heat. Remove the cooked bacon and brown the ground beef in the bacon drippings. Add the onion and spices. Cook until onions are soft (appx 5 minutes). Add garlic and cook for an additional minute. (At this point you can drain the meat, but if using lean beef, you may not need to do so.) Add beans and corn to the pan and crumble in the reserved bacon. Cook on low heat 15 minutes or until heated through.

Honey Salad Dressing Recipe

This salad dressing works wonderfully on a fruit salad or on any salad that you would like a touch of sweetness.
Bee 3

2/3 cup sugar
1 tsp paprika
1 tsp celery seed
1 tsp dry mustard
1/2 cup honey
5 Tbsp vinegar
1 tsp lemon juice
1 cup vegetable oil

Mix all dry ingredients in a blender. Add the honey, vinegar and lemon juice and pulse only until blended. With the blender at its lowest setting, slowly add in the oil. Blend until dressing is smooth.

Quick and Easy Crab Dip Appetizer Recipe

This crab dip recipe only uses one 6 1/2 ounce can of crab meat, so it’s a great way to “stretch” an extravagant food into a perfect party appetizer. Recipes makes 3 cups of dip, which should serve 10-12 people.

1/2 cup mayonnaise
1 1/2 cups sour cream
One 6 1/2 ounce can of crab meat, drained and flaked
1 Tbsp capers
2 Tbsp onion, grated
2 Tbsp lemon juice
Salt & Pepper to taste

Combine all ingredients and chill for a minimum of two hours. Serve with crackers or toasted bread rounds.

Make Your Own All-Purpose Cake Mix

It’s handy to have a cake mix on hand to whip up a quick dessert at a moments notice. But you don’t have to pay the inflated prices of cake mixes at the store, you can make your own for a fraction of the cost. This simple mix can be used to make either white or yellow cake and you can store it in a cool, dry place for up to 12 weeks.

Paisley Cake All-Purpose Cake Mix

10 cups flour
6 cups sugar
1 cup cornstarch
5 Tbsp baking powder
1 Tbsp salt
2 1/2 cups vegetable shortening (such as Crisco)

Sift together all the dry ingredients. Then, in a large bowl use a pastry blender or a stand mixer to blend in the shortening until the mixture is the texture of cornmeal. Store in an airtight container.

To Make a Yellow Cake from the Mix:

5 cups All-Purpose Cake Mix
1 1/3 cups milk
1 tsp vanilla
3 eggs

Preheat oven to 350F. Grease and flour a 13″x9″ pan or two round cake pans. Stir mix, milk and vanilla in a large bowl and beat at high speed with an electric mixer for one minute. Add eggs one at a time, beating well. Pour into prepared pans. Bake 35-40 minutes for the 13″x9″ pan or 30-35 minutes for round cake pans. Test by inserting a toothpick in the center – will be done when the pick comes out clean.  (You can also use the batter for cupcakes, bake 14-19 minutes.)

To Make a White Cake from the mix, follow the above instructions but use only the whites of the eggs.

Easy Frozen Hot Chocolate Recipe – Low-Fat, Low-Calorie, but Extra Delicious!

Frozen hot chocolate is a yummy treat any time of year. Make your own at home to save not only $$, but also calories. This version is much lighter and healthier since it’s made with evaporated milk rather than heavy cream.

Frozen Hot Chocolate

1 cup fat-free evaporated milk
1/2 cup chocolate syrup
1/2 tsp vanilla
3 cups ice

Place all ingredients in a blender and blend until smooth. Serve in glass mugs or coffee cups and top with fat-free whipped topping and chocolate shavings or sprinkles.

Peppermint Version – Use peppermint extract instead of the vanilla.

White Chocolate Cherry Cookies Recipe

These cookies, with the red cherries and white chocolate chips, make very festive Valentine’s Day OR Christmas cookies! Feel free to use either tart or sweet dried cherries.

Kalustyan's Cherries1 2/2 cups flour
1/2 cup unsweetened cocoa
1 tsp. baking powder
1/2 tsp. salt
3/4 C unsalted butter, softened
1 cup sugar
2 eggs
1 cup semisweet chocolate chips, melted
1 cup white chocolate chips
3/4 cup dried cherries

Preheat oven to 350 degrees. Sift together flour, cocoa, baking powder and salt, In another bowl, cream butter and sugar until fluffy, using an electric mixer. Add eggs one at a time, mixing well after each. Mix in melted chocolate. Gradually add flour mixture to chocolate mixture. Stir in the white chips and cherries. Drop by heaping tablespoons onto an ungreased cookie sheet. Bake 10-12 minutes. After slightly cooled, transfer to wire rack to continue cooling.

 Chicken Cacciatore

This is a robust, quick-to-make combination of chicken, onions and bell peppers in a wine-sparkled spaghetti sauce. If you prefer, use skinned chicken breasts to eliminate excess calories.

2 Tbsp. oil
1 lb. boneless chicken breast halves
1/4 tsp. pepper
1 medium onion, sliced
1/2 each red & green bell peppers, chopped
1 jar (16 oz.) prepared spaghetti sauce
1/2 cup HOLLAND HOUSE White Cooking Wine
1 can (3.8 oz.) sliced ripe olives, drained
1/2 lb. spaghetti, cooked, drained

In medium skillet, heat oil over medium-high heat. Add chicken; sprinkle with pepper. Cook until chicken is light brown, about 2 minutes on each side. Add onion and peppers; cook 1 to 2 minutes. Stir in spaghetti sauce, cooking wine and olives. Bring to a boil; reduce heat. Simmer until chicken is tender and no longer pink, about 10 to 15 minutes. Serve over cooked spaghetti.
