Easy Recipe: Roast Pork with Herbs

This is a very easy recipe for roast pork – basically a “set it and forget it” type meal.  It calls for center cut pork loin roast, but you can use it for pretty much any type of pork roast that you may find on sale.

Ingredients:

4-5 pound center cut pork loin roast
1 tsp rosemary leaves
4 cloves garlic, minced (may substitute with 1 tsp garlic powder)
1 1/2 tsp  oregano leaves
1 1/2 tsp thyme leaves
1 1/2 tsp rubbed sage

Preheat oven to 450°.  Place the roast on a rack in a roasting pan with the fat side up.  Season with salt and pepper.  Cut 1/2 inch deep slits in the fat between the ribs.    Mix the seasonings together and press 1/2 tsp of the mixture into each slit.  Rub remaining seasoning mixture over the roast.  Put the roast in the oven and reduce the heat to 325°.  Roast 30 minutes per pound or until meat thermometer registers at 185°.

Easy Cheeseburger Pie Recipe

This is a quick and easy recipe that is basically what the name implies – the taste of a cheeseburger baked in a pie!

1 refrigerated pie crust
1 pound ground beef
1/4 c. chopped onion
1/4 c. chopped pickles
1 tsp salt.
1/2 tsp pepper
2 Tbsp mustard
1/4 c. ketchup
3/4 c. shredded cheddar cheese (also works great with Velveeta)

Preheat oven to 375 degrees. Line a pie plate with the pie crust. Brown ground beef. Drain off fat. Mix in all other ingredients (except cheese) and place in pie crust. Top with cheese. Bake at for 30 minutes.

Easy Strawberry – Topped Chocolate Cake Dessert

I went to a local pick-your-own strawberry farm this weekend and got lots of beautiful berries. This is a very quick and easy way to make a yummy strawberry dessert with fresh. It makes a single serving, but it’s easy to make multiple servings.

1 cup strawberries
2 tsp sugar
4 Tbsp boxed chocolate cake mix
2 Tbsp water
Whipped Cream

Wash and remove stems from strawberries. Slice in quarters. Place in bowl and stir in sugar. Cover and chill in refrigerator until juice starts to form (at least 30 minutes).

When ready to serve, mix chocolate cake mix and water in a small bowl. Microwave for 60-90 seconds (depending on the strength of your microwave). Remove cake from oven and top with strawberry sauce. Top all with whipped cream.

Make Your Own Homemade Bisquick Mix Recipe

It’s always nice and easy to grab a box of Bisquick when you’re making biscuits, pancakes, waffles, etc and want to be done in a hurry.  But, it can be a lot more inexpensive to make your own mix!  After you spend a few minutes making the original mix (this recipe makes 12 1/2 cups) using it is just as quick and easy as using the Bisquick.

10 cups all-purpose flour
1/3 cup baking powder
1/4 cup sugar
4 tsp. salt
2 cups shortening

Mix first four ingredients in a large bowl (use a whisk to mix well). With two forks, or a pastry cutter if you have one, cut the shortening into the mixture until it forms coarse crumbs. Mix can be stored in an airtight container for up to 6 months.

Easy Russian Apricot Chicken Recipe

This recipe is super easy and only takes a few minutes to prepare:

1 bottle Russian dressing (8 oz)
1 jar apricot preserves (12 ounces)
1 envelope onion soup mix
(or use our recipe to Make Your Own Onion Soup Mix)
2 pounds chicken

Preheat oven to 375 degrees.  Cut chicken into serving sized pieces and place in shallow baking pan.  Mix first three ingredients in a bowl.  Brush half of this mixture over the chicken.   Cook for 30 minutes.  Brush remaining sauce on chicken and cook another 15 minutes or until  thoroughly cooked.
