Easy S’Mores Pizza with Frozen Bread Dough

This yummy S’Mores Pizza is a fun way to end pizza night or as dessert on ANY night!

Ingredients

1 loaf Bridgford Frozen Bread Dough, thawed
5 tbsp melted butter
½ cup crushed graham crackers (6 squares)
1 cup semi-sweet chocolate chips
2 cups mini marshmallows

Instructions
Preheat oven to 425º. Lightly coat large baking sheet with cooking spray. Fold bread dough in half and shape into a ball. Place on baking sheet. Brush dough lightly with 1 Tbsp melted butter. Press and stretch dough with palms of hands into a 12-inch circle. Pierce several times with a fork. Brush again with 1 Tbsp melted butter. Back in preheated oven for 15-20 minutes or until golden brown.

While dough bakes, mix 2 Tbsp melted butter with graham cracker crumbs; set aside. Remove dough from oven and brush with 1 Tbsp melted butter. Evenly sprinkle graham crackers over crust. Top with chocolate chips, followed by marshmallows (spread to cover crust). Set oven to broil. Return pizza to oven on middle rack and broil 1 min or until marshmallows are golden brown. Slice and serve while warm.

Easy Microwave Baked Apple Recipe

This microwave baked apple recipe is fast and easy and oh-so good with cinnamon and raisins.  Start with a slightly tart apple such as a Fuji, Gala or Honeycrisp.  You could also try a more tart apple like Granny Smith.  Remove the core using an apple corer or paring knife.  Peel away the top 1/2″ or so of apple peel.

In a small bowl, mix together the filling:

1 tsp raisins
1 Tbsp brown sugar
1 tsp butter

Pack filling into core of apple. Sprinkle apple with cinnamon.

Place apple in a microwave-safe bowl. Pour 1/2 cup water gently into the bowl. Cover bowl with a lid or plastic wrap, leaving a little space or steam to escape. Microwave on high for 5 minutes or until apple is soft. Place apple on a clean bowl or plate and spoon some of the cooking juices over the top. Serve warm.

Easy Strawberry – Topped Chocolate Cake Dessert

I went to a local pick-your-own strawberry farm this weekend and got lots of beautiful berries. This is a very quick and easy way to make a yummy strawberry dessert with fresh. It makes a single serving, but it’s easy to make multiple servings.

1 cup strawberries
2 tsp sugar
4 Tbsp boxed chocolate cake mix
2 Tbsp water
Whipped Cream

Wash and remove stems from strawberries. Slice in quarters. Place in bowl and stir in sugar. Cover and chill in refrigerator until juice starts to form (at least 30 minutes).

When ready to serve, mix chocolate cake mix and water in a small bowl. Microwave for 60-90 seconds (depending on the strength of your microwave). Remove cake from oven and top with strawberry sauce. Top all with whipped cream.

Easy Chocolate Cherry Cake Recipe

This super easy cake uses a boxed chocolate cake mix and a can of cherry pie filling. I also have a frosting recipe below, but if you don’t want to make your own frosting you can use a can of frosting or you can use my recipe for Easy Chocolate Frosting (it’s really rich!)

1 Box of Chocolate Cake Mix
3 Eggs
1 Can (21 oz) Cherry Pie Filling

Combine cake mix, eggs and pie filling. Mix until well blended and pour into a greased and floured 9 x 13 cake pan. Bake at 350 degrees for 35-40 minutes or until cake springs bake when touched.

Frosting:

1 C. Sugar
5 Tbsp Butter
1/3 C. Milk
6 oz. Chocolate Chips

In a small saucepan, combine sugar butter and milk. Bring to a boil, stirring constantly and cook 1 minute. Remove from heat and stir in chocolate chips until melted and smooth. Frost fully cooled cake.

Easy Strawberry Yogurt Cake

This easy cake, which uses a boxed white cake mix, is a perfect, light cake for the spring or summer.

1 White Cake Mix
3 Egg Whites
1/3 C. Vegetable Oil
3/4 C. Water
Two 6 oz. Containers of Strawberry Yogurt
8 oz. container of frozen whipped topping, thawed
Sliced fresh strawberries

Mix cake mix, egg whites, oil, water and one container of yogurt until blended.  Beat at medium speed 2 minutes.  Pour into greased 11×14″ cake pan and bake at 350° for 35-40 minutes.  Let cake cool completely.

For topping, fold the other container of yogurt into the thawed whipped topping and frost cake.  Decorate with slices of fresh strawberries if desired.

Microwave Chocolate Cake Recipe – Delicious Cake in 5 Minutes!

First of all, let me just say that this picture does not do this recipe justice!!!  It tastes soooo much better than this picture looks.

This recipe is courtesy of my friend Janet. It is the perfect solution for those times you are craving a sweet baked dessert and are short on time! It’s also nice on hot summer days when you don’t want to heat your oven or in instances when you don’t have access to an oven – i.e. college dorm, extended stay hotel suite, camper, etc.

¼ C. flour
¼ C. sugar
2 Tbsp.cocoa
Dash of salt
1 egg
3 Tbsp. milk
3 Tbsp. vegetable oil
2 Tbsp. chocolate chips
Dash vanilla extract

Whisk dry ingredients in a large mug with a fork. Add egg, milk, oil and vanilla and mix well with a spoon. Stir in the chocolate chips.

Microwave mug for approximately 4 minutes for a 600 watt microwave or 3 minutes for a 1000 watt microwave – adjust time as necessary for other sizes. Let cool slightly before eating either straight out of the mug or dumped out onto a plate. (It makes a BIG serving, so you may want to divide it on plates for two to share.)

Also tastes great if you add a scoop of vanilla ice cream to mug on top of finished cake and top with chocolate syrup/hot fudge.

Easy & Cheap Dessert in a Hurry – Cinnamon Tortilla Roll-Ups

When you want or need a little dessert in a hurry, these can be made in less than a minute and for only a few cents each!

“cinnamon-sticks”

Ingredients:

Flour Tortilla(s)
Softened or spreadable butter
Cinnamon
Brown Sugar (white sugar can be used if you prefer)

Simply spread a tortilla with butter, then sprinkle with brown sugar and cinnamon (as much or as little as you like, I like a LOT).  Roll tortilla up into a little log and microwave for approximately 30 seconds or until hot.  You end up with a very tasty dessert with almost no effort.  This is also great for those hot summer months when you don’t want to turn on the oven to prepare a dessert.
