Easy Russian Apricot Chicken Recipe

This recipe is super easy and only takes a few minutes to prepare:

1 bottle Russian dressing (8 oz)
1 jar apricot preserves (12 ounces)
1 envelope onion soup mix
(or use our recipe to Make Your Own Onion Soup Mix)
2 pounds chicken

Preheat oven to 375 degrees.  Cut chicken into serving sized pieces and place in shallow baking pan.  Mix first three ingredients in a bowl.  Brush half of this mixture over the chicken.   Cook for 30 minutes.  Brush remaining sauce on chicken and cook another 15 minutes or until  thoroughly cooked.

Easy Veggie Enchilada Recipe with Peppers

This enchilada recipe is very easy and only takes a few minutes to prepare.  It also had a great, fresh taste to it.

1 Green Pepper
1/2 Red Pepper
1/2 Yellow Pepper
6 8″ Flour Tortillas
8 oz shredded Mexican blend cheese
1 can enchilada sauce
Tajin or Taco Seasoning

Slice into very thin strips.  Place in a microwave-safe bowl and cover.  Cook on high 2-3 minutes or until beginning to soften.  Divide peppers among tortillas.  Sprinkle each with taco seasoning (I prefer to use Tajin, a mexican seasoning, but if you can’t find it taco seasoning can be used instead.)  Top with shredded cheese.

Pour a little of the enchilada sauce into bottom of 10″ x 10″ baking dish.  Roll up each tortilla and place into dish.  Pour remaining enchilada sauce on top of rolled tortillas.  Top with remaining shredded cheese.  Bake in 350 degree oven 20-25 minutes, or until heated through.

Fun & Easy to Decorate Easter Basket Cupcakes

I remember my Grandma making this special cupcakes for us when I  was a kid and I think it is about time that I make some.  If you check out the Celebrate with Hershey’s web site, you can grab a recipe to make the cupcakes from scratch, but feel free to use a mix.

To decorate the cupcakes, use tinted coconut to make “Easter basket grass”.  To tint it coconut, just mix a few drops of green food color with 3/4 teaspoon water and mix into 1-1/2 cups coconut until evenly tinted.  Use Twizzlers to make basket handles and then decorate using mini jellybeans and Mini Robin Eggs.

While we’re on the topic of Easter and Easter candy, stop by my main blog, Thrifty Jinxy to enter to win a Hershey’s Easter Prize Pack. (Ends 4/16/11.)

How to Use Frozen Blueberries to Bake Muffins & Other Goodies

If you don’t have fresh blueberries, frozen blueberries can turn out great in muffins and other baked goods, as long as you prepare them before dumping them in your batter. If you add frozen blueberries directly to your other ingredients, the cold temperature will alter baking times and temps for your recipe and using frozen berries can also turn your whole muffin into a grayish/purplish looking disappointment.

To use frozen berries, just place them in a colander and run

How to Make Your Own Onion Soup Mix

There are lots of tasty recipes that call for onion soup mix (chip dip and meatloaf being among my favorites), but those little packets can be pricey!  Save yourself a bit of cash by making your own. This will be most effective if you buy the ingredients from the bulk foods section of your grocery store or local health food store.

Homemade Onion Soup Mix

3/4 C. instant mixed onion
4 tsp. onion powder
1/3 C. beef-flavored bouillon powder
1/4 tsp sugar
1/4 celery seed, crushed (optional)

Mix all ingredients in a container with a tight-fitting lid. Use 2 Tbsp of this mix in place of a packet. You will find the flavor stronger than the packets, so you may need less.

Join Ragu at "Mom’s the Word on Dinner"

Dinner-time challenges can be trying with kids not ready to eat and parents not ready to cook.  Ragu understands these challenges and that’s why they launched “Mom’s the Word on Dinner,” an online community for moms to laugh, learn and share their take on what really happens at dinnertime.
Ragú® has teamed up with some familiar faces, including some of the fabulous ladies of Momversation™, to bring moms together to share stories and tips, celebrate the small wins and laugh about situations that only other moms can relate to.  Every month, this online community tackels topics from how to deal with picky eaters, to getting kids to eat their veggies to what is being discussed at the dinner table, with some tips from parenting expert and author, Dr. Michele Borba, and Registered Dietician, Dr. Felicia Stoler.
In addition to the ongoing fun and conversation, the Mom’s the Word on Dinner community features videos, photos, polls, quizzes and dinner ideas with quick and easy recipes. With two full servings of veggies in every half cup of Ragú® Old World Style® Traditional pasta sauce, Ragú® provides nutritious meal options for parents to help them on their mission to feed their kids well. This wouldn’t be a true community without interaction and Ragú® wants to hear what happens at dinnertime in kitchens and homes across the country!  Moms can join the conversation and tell their story for a chance to be featured in a Ragú® ad in PEOPLE magazine at Facebook.com/ragusauce
Disclosure: I was entered for a chance to win a Ragú® prize package in exchange for this post.  No monetary exchange took place.”
