Easy Turkey Quesadillas – Use Your Leftover Turkey

Do you have a lot of leftover Thanksgiving turkey?  This easy recipe will give you a little different spin on tradition.  And because it is super easy, it’s perfect for when you are exhausted after the big day!

Simple Toaster Oven Turkey Quesadillas

Large Flour Tortillas
Leftover Cooked Turkey (shredded)
Canned Refried Beans
Shredded Cheese, Mexican Style or Cheddar
Chunky Salsa

Spread 1/3 cup refried beans evenly over a tortilla evenly.  Top with shredded turkey.  Then spread 1/4 cup salsa over the turkey and beans. Sprinkle top with shredded cheese. Fold tortilla and half and set on toaster oven rack. Use the TOAST setting and toast until lightly browned.

Caramel Popcorn Party Pops – Perfect Candy Treat for Thanksgiving!

This cute sweet treat is perfect to add a little fun to your Thanksgiving party.  They are easy to make and the recipe comes courtesy of Jolly Time Popcorn

  • 1 bag popped JOLLY TIME Blast O Butter Microwave Pop Corn, popped
  • 2 cups of 1/2 inch pieces of broken thin pretzel sticks
  • 1 14 oz package caramels
  • 2 Tbsp water
  • Softened Butter
  • 72 whole thin pretzel sticks
  • 1 cup semisweet chocolate chips

Line 3 large cookie sheets with waxed paper.  Pop popcorn according to package directions. Coat inside of large mixing bowl with nonstick cooking spray.  Pour popcorn into the bowl, discarding unpopped kernels.  Add broken pretzels and stir. In large microwave-safe bowl, heat caramels and water, uncovered, on HIGH for 2-1/2 to 3 minutes or until melted and smooth, stirring well every minute.  Pour over popcorn and pretzels.  Stir until well coated. Let stand 5 minutes.

Butter your hands and shape mixture into 1-1/4-inch diameter balls around whole pretzel sticks.  Press firmly and leaveg bottom half of pretzel sticks extending beyond popcorn ball to make “handles.” Place on cookie sheets and let stand until firm, about 15 minutes.  Melt chocolate chips according to package directions and let cool 2 minutes. Pour chocolate into a zip-top bag, squeeze out air and seal.  Cut small corner off bag.  While holding balls by the pretzel handles, squeeze chocolate decoratively over balls. Return to cookie sheet and let stand 1 to 1-1/2 hours or until until chocolate is set.

Easy Sweet Potato Hash Recipe

Sweet PotatoesIf you wind up buying too many sweet potatoes for your Thanksgiving dinner, use the extras to make this tasty sweet potato hash.

1 1/2 lb peeled sweet potatoes, diced
4 Tbsp butter
1 cup onion, diced
1 cup celery, diced
3 cloves garlic, minced
1 cup red bell pepper, diced
1 cup green bell pepper, diced
1/4 tsp crushed red pepper flakes
salt and pepper

In a medium pot, cover potatoes with 2 inches of salted cold water. Bring to a boil, reduce heat and simmer for 5 minutes. Drain.

Melt the butter in a large non-stick skillet over medium heat. Add onion and celery – cook for 8-10 minutes or until onions are soft. Add garlic and cook another 2 minutes, stirring constantly. Add red and green peppers, and crushed red pepper flakes – cook for 5 minutes. Add potatoes and cook until just heated through. Add salt and pepper to taste.

Easy Spam and Cheese Crescent Roll-Ups Recipe

 

This is a super easy and cheap way to stretch one Spam Single into a whole meal. This was made with Pillsbury crescents (that I happened to get free with a coupon), but you could use store brand or even mix up your own dough for the most bang for your buck.

1 Spam Single
1 can crescent rolls
4 slices American cheese

 

Preheat oven to 375 degrees. Dice the Spam single into very small pieces. Brown in a skillet on medium high heat. Unroll crescent rolls and place on baking sheet. (I use Silpat Liners to keep them from sticking.) Break the 4 slices of cheese in half diagonally and place 1/2 on each piece of crescent roll. Sprinkle the Spam cubes on the rolls. Roll up and space evenly on the baking sheet. Bake for 11-13 minutes or until golden brown.

Easy S’Mores Pizza with Frozen Bread Dough

This yummy S’Mores Pizza is a fun way to end pizza night or as dessert on ANY night!

Ingredients

1 loaf Bridgford Frozen Bread Dough, thawed
5 tbsp melted butter
½ cup crushed graham crackers (6 squares)
1 cup semi-sweet chocolate chips
2 cups mini marshmallows

Instructions
Preheat oven to 425º. Lightly coat large baking sheet with cooking spray. Fold bread dough in half and shape into a ball. Place on baking sheet. Brush dough lightly with 1 Tbsp melted butter. Press and stretch dough with palms of hands into a 12-inch circle. Pierce several times with a fork. Brush again with 1 Tbsp melted butter. Back in preheated oven for 15-20 minutes or until golden brown.

While dough bakes, mix 2 Tbsp melted butter with graham cracker crumbs; set aside. Remove dough from oven and brush with 1 Tbsp melted butter. Evenly sprinkle graham crackers over crust. Top with chocolate chips, followed by marshmallows (spread to cover crust). Set oven to broil. Return pizza to oven on middle rack and broil 1 min or until marshmallows are golden brown. Slice and serve while warm.

Easy Halloween Punch Recipe – Ghoulish Green Punch!

Want to add a spooky beverage to your Halloween party? Try this easy recipe to make a Ghoulish Green punch. To add some flair to the green drink, you can toss in a few gummy worms. You can also take plastic spiders or eyeballs and place them in ice cube trays. Fill with water to make spooky ice cubes!

3 cups lemon-lime soda (as in Sprite or 7-up)
6 oz can frozen lime juice concentrate
1 quart lime sherbert, softened

In a large punch bowl mix all ingredients above along with three 6 oz cans full of water. Mix well until sherbert is fully dissolved.

Easy Lower Fat & Lower Sugar Banana Bread Recipe

This is a delicious, moist banana bread recipe. It is hard to believe that it has less fat and sugar than common recipes. I add whole wheat flour (see ingredient list) to make even more healthy. However, I also like to add about 3/4 cup of semi-sweet chocolate chips. This ups the fat level, but dark chocolate is good for you!

  • 2/3 cup white sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla
  • 2 large bananas, mashed
  • 1/4 cup water
  • 1 2/3 cups all-purpose flour (I use 1 c. white flour and 2/3 c. whole wheat)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  1. Preheat oven to 350 degrees F.  Coat a loaf pan with non-stick cooking spray. 
  2. In a large bowl, cream the sugar and butter together. Beat in the eggs, vanilla, water and bananas
  3. In a small bowl, mix together all dry ingredients until well blended.
  4. Add the dry mixture into the banana mixture just until moistened. 
  5. Bake for 60 minutes or until top is firm to touch and golden brown.  Cool in pan tilted onto its side for 10 minutes and then remove from pan and let cool on a wire rack. 

Easy Microwave Baked Apple Recipe

This microwave baked apple recipe is fast and easy and oh-so good with cinnamon and raisins.  Start with a slightly tart apple such as a Fuji, Gala or Honeycrisp.  You could also try a more tart apple like Granny Smith.  Remove the core using an apple corer or paring knife.  Peel away the top 1/2″ or so of apple peel.

In a small bowl, mix together the filling:

1 tsp raisins
1 Tbsp brown sugar
1 tsp butter

Pack filling into core of apple. Sprinkle apple with cinnamon.

Place apple in a microwave-safe bowl. Pour 1/2 cup water gently into the bowl. Cover bowl with a lid or plastic wrap, leaving a little space or steam to escape. Microwave on high for 5 minutes or until apple is soft. Place apple on a clean bowl or plate and spoon some of the cooking juices over the top. Serve warm.

Chicken Sausage Stew Recipe

This chicken stew looks like it would be the perfect thing for a chilly fall day.  It was submitted by Lisa at Mommy’s Nest. She mentioned it is something her grandma might love and I think MY grandma would have loved it too!

3 Sausages of your choice – I used Chicken Apple without casings – you can be flexible and use what you like. I would suggest avoiding spicy sausage as it would negate the herbs.

1 chicken breast, diced – raw or cooked/leftover. (Alternatively, you could just add two more sausages and omit thechicken breast)

1 cup rice, uncooked

1/2 cup white wine (if you don’t want wine, use more chicken stock)

4 cups of stock – chicken or vegetable

The important parts are next and I don’t consider them flexible!

3 carrots, sliced to 1/4 inch
1 large onion
1 red bell pepper, sliced
1/2 cup corn
2 T. Olive Oil
1 T. Garlic chopped
1 tsp salt
1 tsp black pepper
2 bay leaves
1 tsp. thyme – dried
1/4 t cumin

Directions: Place two Tbsp water, carrots and sausages in pan.  Cover and heat over medium heat for five minutes until steamy. Remove lid and brown sausages. Remove sausages and carrots, set aside on a plate. Add onion, thyme, salt and peper, and olive oil to pan and cook until translucent, about 5 minutes on medium heat. Add raw chicken and cook through about 5 minutes more. (If using cooked chicken you can just add after onions are translucent).

Deglaze the pan with 1/2-1/4 c. white wine.

Add red bell pepper, cumin, garlic and cook on medium for 2-3 minutes.

Add stock, rice, bay leaves and bring to a boil.  Reduce heat and let simmer for 15 minutes. Then check salt and pepper to see if you need more. (If rice is already cooked, just heat through at this stage)

Add in corn, sausages sliced 1/2 inch thick and the carrots.  Let simmer for five minutes.

Serve and enjoy!
