I love summer, don’t you?! This is the time of year I can relax a bit and really enjoy my family. With only a few months of summer break, we try to make the most of our time together. Because my husband works during the week, we keep the weekends open just for the family. We may just grab a matinee or play a few rounds of miniature golf.

If the weather is clear and the temperature is not too high, we love to have a picnic at a local park. When we do, I a sure to pack plenty of sandwiches using our favorite Brownberry® Whole Grains Sliced Bread, filled with my Waldorf Chicken Salad.
 

Waldorf Chicken Salad Sandwich

 
Ingredients:

1/3 cup fat-free mayonnaise
1/3 cup fat-free plain yogurt
1 teaspoon lemon juice
3 cups chopped cooked chicken breast
1 medium red apple, diced
1 cup red grapes, halved
1/2 cup sliced celery
1/2 cup toasted pecans, chopped
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

In a medium bowl, whisk mayo, yogurt, lemon juice, salt and pepper. Add chicken, apple, grapes, celery and pecans. Stir to coat well. Serve on Brownberry® Whole Grains Sliced Breads

Ingredients

Cranberry & Avocado Sandwich Recipe

Ingredients (1 Serving)

2 slices Brownberry® bread
3 oz. boiled ham, very thinly sliced
1/4 avocado, mashed
2 tsp. jellied cranberry sauce

Directions

Spread avocado to cover one slice of bread and cranberry sauce to cover the other slice of bread. Layer ham over the avocado and place the cranberry slice of bread on top, sauce-side down. Cut in half and enjoy.

Day After Easter Recipe – Use Up Those Leftover Boiled Eggs & Ham

This recipe is always a good way to use up both leftover hard-boiled Easter Eggs AND leftover ham.  Great for lunch or a quick dinner.

4 hard-boiled eggs, chopped
2 slices American cheese, chopped
1/3 c. ham, diced
1 heaping Tbsp. mayonnaise
Salt & pepper

Mix all ingredients together and then spread inside hamburger buns (or inside leftover dinner rolls from Easter). Wrap each sandwich in foil and heat in the oven at 400 degrees until heated through – appx 10-15 minutes.
