Hard boiling eggs is one of those things most of us have to stop and think about each time we make them. How long do I boil them? Did I boil these long enough? Can I peel them yet? Are they cooled enough? It can be difficult because you never know if they are cooked until it’s too late. You cool, peel and cut open the egg only to find out the yolk is runny. I got so tired of this happening that I experimented until I got it just right. Having chickens made it a bit easier, endless eggs!  

It can be easy to over cook an egg. If that happens the yolk will be hard and chewy, very unappetizing.  Follow these easy steps and you will have the perfect hard boiled egg every time. 

1. Place the eggs in a sauce pan and cover with water. Make sure the water covers the top of the egg. Bring to a  boil.

2. Immediately turn off the burner, remove the pan from the heat and cover.  Follow the chart below: Stoves burners do vary and some heat hotter and quicker than others. So you may need to adjust your time.

3. Place the eggs in cold water for 5 minutes to stop the residual cooking.

 Serve warm or refrigerate.  To make peeling easier, do not over crack the egg.  Tap it gently on one end, peel away the shell to form a circle, then use your thumb to peel, kind of like you would an orange. 

For A Soft Cooked Egg:  Simmer gently on medium low, about 8 minutes.

Crispy bacon. Cheddar cheese. Sour Cream. All yummy ingredients that help make this a great addition to any meal, especially your next BBQ! Show off with this easy, Loaded Baked Potato Salad. Who knew it would be so easy to make potato salad? One pot, one bowl, a spoon and measuring cup is all you need. Last time I purchased potato salad from the deli it was $5.99 lb. I made this potato salad with ingredients I already had right in my refrigerator!

What you need:

4 large potatoes
1/4 cup mayo
1/4 cup sour cream
1/2 cup cooked crispy bacon (or bacon bits)
1/2 cup shredded cheddar cheese
green onion to garnish
salt & pepper to taste
 

What to do:

  1. Wash, dry and cut potatoes into bite size pieces. Boil on Medium high until fork tender. Drain, rinse with cool water, set aside.
  2. In a medium bowl mix together the mayo, sour cream, bacon, cheese, salt & pepper.
  3. Add the potatoes, cover and refrigerate until cold. About an hour.

Tip* This salad is best if made in the morning or the day before. Add a spoonful of mayo or sour cream the next day if necessary.

20 Minutes One Pan- Easy Skillet Lasagna

Gone are the days when lasagna was reserved for a Sunday dinner or special occasion. What use to take over an hour to do and cost around $20 has been simplified into a delicious dish that can be made in 20 minutes for around $8. The best part is that there is no need to boil the noodles or use multiple pots and pans. This lasagna is made in one skillet!

What you need: 

1lb ground beef
12 oz. mafalda noodles (looks like mini lasagna!) or medium egg noodles
1 jar of your favorite pasta sauce
6 oz. ricotta cheese
1/4 cup parmesan cheese

What to do:

Brown the ground beef, drain the fat, return to medium low heat.

Add the sauce and noodles, increase heat to medium high and cook for 10 minutes.  Stir occasionally.

Reduce heat to medium low, add the ricotta cheese , gently mix in, do not mix completely. You don’t want it to blend away into the sauce.  Let simmer for 5 minutes.

Plate, sprinkle with parmesan, serves 4.

Chocolate and mint…   a classic, all time favorite of mine.  And of many others,  I am certain of it! I have made grasshopper cookie sandwiches quite a few times in the past, but this time I decided to try something different. Although they aren’t totally different,  it still was something new and besides, I was being lazy and did not feel like whipping up the batch of homemade cookies.  Instead I spruced up a boxed brownie!

You can get away with using boxed mixes if you create at least one element homemade, no one will ever know! Shhhh.  Try them out, Let us know what you think !

Chocolate Mint Grasshopper Brownie Bites

Ingredients
  1. 1 Box Brownie Mix, prepared
  2. 1/3 cup flour
  3. 1/2 cup mini chocolate chips
For the frosting
  1. 1/4 teaspoon peppermint extract
  2. 1 tablespoons butter
  3. 1 cup powdered sugar
Instructions
  1. Preheat the oven to 350
  2. Mix the flour into the prepared brownie batter, this will thicken it up making it easy to spoon onto cookie sheets.
  3. Drop spoonfuls, about 2 inches apart and bake for 8-10 minutes
  4. Allow to cool completely.
Mix the frosting
  1. Cream the butter (using a hand mixer) until smooth, add the peppermint extract and fold in the powdered sugar.
  2. Use the hand mixer to whip until all the powdered sugar is incorporated.
  3. Spread a small amount of frosting on the the brownies and sandwich them together.
  4. Refrigerate for about 10 minutes to set up.
Notes
  1. These freeze really well, make them ahead of time or make a double batch and freeze!
