Cherry Spinach Tart Smoothie Bowls Recipe

INGREDIENTS

For the Smoothie:

  • 1 ripe banana
  • 2 cups frozen tart cherries
  • 1 cup baby spinach
  • ½ cup unsweetened nut, soy or animal milk
  • Maple syrup, to taste (about 1 tablespoon)

For the Toppings:

  •   Van’s Soft-Baked Whole Grain Granola Clusters
  • Chopped walnuts
  • Hemp seeds

INSTRUCTIONS

  1. Combine all the smoothie ingredients into a blender, and blend on high until very smooth. You might need to add more liquid, but try to keep it as thick as possible.
  2. Pour into a bowl, and then top with toppings. Serve immediately.

Beer Braised Sausage On Sweet & Spicy Warm Slaw

This yummy beer braised sausage recipe offers taste of summer year round!  Guiness beer. Sausage. Peppers. Those are just a few of the ingredients that make this dish a stand out!  That Guiness beer also makes it just perfect to serve as a St. Patrick’s Day meal!

For this recipe you won’t need your grill, so if it is stored for the winter .. not a problem.  This sausage is braised and slow cooked in beer and served over a slaw.  No, not cole slaw – that would be for summer.  We are talking about a warm slaw with a kick.  Sweet & spicy to keep you warm this winter.  The recipe is easy to adjust the spice level just in case you are not a fan of spicy.

Just look at all this color !  Fresh, crunchy, flavorful.  It won’t be long before this is a new favorite in your household.

Beer Braised Sausage On Sweet & Spicy Warm Slaw

Ingredients
  1. 1 bottle Guiness Beer
  2. Sausage of your choice (we used a German Cheddar Sausage)
  3. 1 tablespoon dijon mustard
  4. Salt & Pepper
For the slaw
  1. 1 cup shredded cabbage
  2. 2 large carrots, shredded
  3. 1 red pepper, sliced thin
  4. 1 tablespoon apple cider vinegar
  5. 1 tablespoon white sugar
  6. 1/2 teaspoon minced garlic
  7. 1/2 teaspoon red pepper flakes (optional)
  8. 1 teaspoon olive oil
  9. Salt & Pepper
For the sausage
  1. In a skillet on medium high heat, drizzle olive oil and add sausages. Brown on each side (about 1 minute)
  2. Add the beer, mustard and a pinch of salt & pepper.
  3. Bring to a boil, reduce to simmer.
  4. Cook for 15 minutes covered and an additional 10 minutes without the cover.
  5. Remove the sausages from the pan and set aside.
For the cabbage
  1. In the same skillet, over medium heat drizzle olive oil and add vegetables
  2. Mix in the vinegar, sugar, garlic and seasonings.
  3. Saute for about 10 minutes, add sausage back to the pan on top of the slaw.
  4. Heat through together covered until sausage is warmed again.
  5. Serve hot with a drizzle of dijon mustard!

Green Chile Pulled Pork Recipe

 
Ingredients:
– 2 lbs. pork shoulder roast

– salt to taste (optional)

Directions:
Place a 2 lb. pork shoulder roast in a slow cooker.
Add one tub of the Green Chile Corn Chowder on top (add a dash of salt if desired).
Cook on low for 6-8 hours.
Pull apart and enjoy!

Today is National Popcorn Day! Popcorn is one of my very favorite top snack foods! I love to curl up on the couch at night to watch my favorite shows on the DVR and dive into a big bowl full of popcorn. To celebrate National Popcorn Day I have come up with a super easy Parmesan Pepper Popcorn Recipe to add a little extra savory flavor to your next popcorn snack. Of course you can make this with air popped or stove-top popped popcorn, but I partnered with Orville Redenbacher’s for a campaign today and used Orville Redenbacher’s Movie Theater Butter microwave popcorn in the convenient pop-up bowl for mine.
 

Parmesan Pepper Popcorn Recipe

 

Ingredients:

One Bag Microwave Popcorn
(or 8 cups popped corn)
2 Tbsp Parmesan Cheese
1/2 tsp Freshly Ground Black Pepper

Directions:
Pop popcorn according to package directions.
Top with parmesan and pepper.
Toss to coat.
Enjoy!

Easy Taco Casserole Recipe

This Easy Taco Casserole Recipe is one that I have been making for about as long as I have been cooking on my own. That’s because it is EASY and it is GOOD!! It’s so simple to assemble without a lot of time and the result is delicious. It also makes GREAT leftovers, but I recommend heating them up in the oven rather than the microwave if you want the chips to stay crispy.

The recipe uses a packet of taco seasoning mix, but you can substitute your own homemade taco seasoning – something that is super easy to mix together and keep on hand in your pantry. Another possible variation for this recipe is to make it with chicken instead of beef. To do that, I just dice up two chicken breasts and make sure it is cooked all the way through as the first step of the recipe preparation.
Ground Beef Taco Casserole Ingredients

Easy Taco Casserole Recipe

Ingredients:

1 pound ground beef
1 small onion, chopped
1/2 green pepper, chopped
1 packet taco seasoning (or make your own)
14.5 oz diced tomatoes
1 15.5 oz can pinto beans (drained and rinsed)
1/2 bag tortilla chips
8 oz shredded cheddar or Mexican blend cheese

Directions:

Preheat oven to 350 degrees. Brown ground beef with onion and green pepper. Drain fat.
Add in taco seasoning, undrained tomatoes and pinto beans. Cook until heated through.
Cover the bottom of a 9×9 baking dish with a layer of tortilla chips. Cover with half the meat mixture. Sprinkle with 1/3 of the cheese. Add another layer of chips. Add the rest of the meat mixture. Sprinkle with another 1/3 of the cheese. Add a last layer of chips and top with the remaining cheese.
Bake for 20-30 minutes or until cheese is melted and beginning to brown.

I have gone my whole life never tasting a macadamia nut cookie. Every time we visit Subway I choose the double chocolate. Something about the white chocolate macadamia nut just never really appealed to me, something about the lack of color. I know, sounds crazy right?  Well, it is said that we eat with our eyes first, so I guess that is why!  A friend convinced me to try a bite of her’s and it wasn’t that bad. I just thought the cookie needed something else.  More color, another level of flavor.  My solution- add cranberries!

Guess what is my new favorite?  This Cranberry White Chocolate Macadamia Nut recipe.  I would take these over my chocolate cookie any day.  I love that they are not overly sweet. The base of the cookie is light and fluffy with a slight crunch around the edge.  Plump cranberries, nutty chocolate..  what more could you want?

Cranberry White Chocolate Macadamia Nut Cookies Recipe

Ingredients
1 cup packed brown sugar
1⁄2 cup white sugar
2 sticks butter, softened
2 large eggs
2 teaspoons vanilla
2 1⁄4 cups flour
1 teaspoon baking soda
1⁄4 teaspoon salt
1/2 cup dried cranberries
1 cup coarsely chopped macadamia nuts
1 1⁄2 cups white chocolate chips

Instructions
Preheat the oven to 350 degrees.
Cream together the butter, sugar, eggs and vanilla with an electric mixer.
In a separate bowl, sift flour, baking soda and salt.
Mix the flour into the creamed butter, a little at a time.
Once combined completely, fold in the cranberries, chocolate chips and nuts.
Spoon onto a cookie sheet and bake for 10-12 minutes or until golden brown.

Notes
These freeze really well. Make a double batch and freeze for parties or holidays.

When the cold weather hits, there is nothing I love more for breakfast than oatmeal.  I use to make a basic quick oat with brown sugar, maple syrup and maybe some raisins.  It was my go to in the morning. Then one morning I decided to add a spoonful of my homemade applesauce. It was amazing. Just that simple addition took it to a whole new level.  I was hooked. Not on the applesauce oatmeal,  but on trying new flavors!

Next up,  this creamy oatmeal that is full of sweet and crunchy , but is also good for you.  Cranberries, pecans, cinnamon, nutmeg and of course my not so secret ingredient.  French Vanilla Creamer!  I think I bake/cook with my flavored coffee creamers more than I use them in coffee.  Try it out and let us know how much you love it.

  3. 1/4 cup french vanilla creamer

  6. 1/2 teaspoon nutmeg
  7. 1/4 teaspoon salt
  8. 2 tablespoons chopped cranberries
  9. 1/4 cup chopped pecans
Instructions
  1. Bring the water, salt and cranberries to a boil on the stove, in a medium sauce pan.
  2. Stir in the oats , mix and reduce heat to low.
  3. Add the remaining ingredients and mix well.
  4. Cook until oats are tender, about 3-5 minutes. Remove from heat.
  5. Serve garnished with a dash of the french vanilla creamer.

This Dragon’s Blood Punch made with Hawaiian Punch and 7-up is quite delicious.  While it is perfect for Halloween with its deep blood  red color, I think this may end up being a year-round party drink for us.

Making this yummy red punch only uses three ingredients plus water. It’s super easy to make, but you’ll need to start a day ahead of time because for best results it should freeze overnight.

If you’re having an evening party, you should be able to get away with mixing it up in the morning and letting it freeze until party time.

Dragon’s Blood Red Halloween Punch Recipe

Ingredients:

1/2 Gallon Hawaiian Punch Fruit Juicy Red
3 oz package of cherry-flavored gelatin powder
1 cup water
1/2 liter 7-up

How to make Halloween Punch:

Put Hawaiian Punch in a large freezer-safe container.

Bring water to a boil.

Mix in gelatin and stir for 2 minutes or until dissolved.

Add gelatin mixture to Hawaiian Punch and stir.

Divide into four smaller containers.  

Freeze overnight.

When ready to serve, place frozen mixture in a punch bowl, add 7-up and stir until slushy.
